Gluten-Free Baguettes

My kids are hilarious. They’re my official taste-testers for a reason. I’d planned to bake like a mad-woman this week, trying out as many variations of bread as possible. That’s what I’ve been doing and they’ve been giving me their official thumbs-up or thumbs-down. My son actually uses his thumb. I’ve had some ups, some downs and some sideways.

Late last night, I made four gluten-free baguettes. The kids were already in bed, which surprisingly isn’t necessarily a given at midnight, so they weren’t able to immediately sample my creations. This morning I sliced the baguettes lengthwise and made toast with raspberry jam. It was an overwhelming success. My daughter kept saying it tasted like sourdough toast, which, incidentally, used to be her favorite toast.

Halfway through her breakfast, my daughter put down her toast, threw her arms in the air and exclaimed, “Goodbye brown rice bread!”
